It's like deer meat in the "gaminess"? I've had deer, elk & moose and enjoyed them all . I've also tried buffalo, rabbit and goat.

I've passed it off as beef a few times when having people over for dinner and nobody has ever doubted that it was anything else. I've used ground horse to make spaghetti sauce too.

From the sounds of it, I think you will like horse I don't really like rabbit tho, but I also don't like hare that much.

I'd love to try camel or alligator.

Gator is pretty good, hard to describe the taste though. Kinda like a cross between Turkey and Pork in texture.
